Dried Fruit
While Nicaragua has growing seasons year round, some crops are very seasonal. For example, mangos start appearing on the market in late February but by June there will not be a mango to be found. During peak times, you can't give them away.
A common method of preserving fruit is to dry it. For others, it is better to make it into fruit leather.
